One of the tastiest and simplest cakes out there: a French yogurt cake. It does not get more basic than this. Very easy to throw together for an impromptu dinner among colleagues at our compound in Juba.


I followed the exact recipe from The Cafe Sucre Farine, substituting lemon for lime, and adding a little bit of lime zest to the glaze.

  • ½ cup plain yogurt
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • grated lime zest, from 2 small limes
  • ½ cup canola oil

For the glaze:

  • ¼ cup fresh lime juice
  • ¾ cup powdered sugar
  • 1 tsp lime zest

Mix together the first three ingredients, combine with rest, adding in the oil last.

Bake in a greased cake pan at 350f (175c) for 30-40 minutes, depending on your oven.

Once done, flip out of the pan and let cool on a rack. Once cool, drizzle the glaze mixture over the cake.
