Banana bread…the perfect breakfast and the perfect way to reduce food waste. No one should ever throw out a brown banana!

This morning’s recipe comes from my mom, all the way in Chilliwack, B.C., Canada.

I changed it a bit to make it a more fortified breakfast. Here’s the original recipe:

  • 3 large bananas, mashed
  • 3/4 cup white sugar
  • 1 egg
  • tsp. baking soda and baking powder, each
  • 1/2 tsp. salt
  • 1 1/2 cups all purpose flour
  • 1/3 cup melted butter

Here’s the recipe I used:

  • 3 large bananas
  • 1/2 cup coconut sugar
  • 1/4 cup white sugar
  • 1 egg
  • tsp. baking soda and baking powder, each
  • 1/2 tsp. salt
  • 1 1/2 cups all purpose flour
  • 1/3 cup melted butter and Kentaste coconut oil (about half each to make 1/3 cup)
  • 1 tsp Aduna Moringa Powder
  • 1 tbsp ground flax seeds
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla
  • leftover mixed seeds to sprinkle on top (sunflower, flax, pumpkin)

Mash bananas, add sugar, add egg, add butter/oil, stir in dry ingredients.

Bake at 375f (190c) for about 45 minutes.

Here it is!

And topped with some delicious almond butter.
