Banana bread…the perfect breakfast and the perfect way to reduce food waste. No one should ever throw out a brown banana!
This morning’s recipe comes from my mom, all the way in Chilliwack, B.C., Canada.
I changed it a bit to make it a more fortified breakfast. Here’s the original recipe:
- 3 large bananas, mashed
- 3/4 cup white sugar
- 1 egg
- tsp. baking soda and baking powder, each
- 1/2 tsp. salt
- 1 1/2 cups all purpose flour
- 1/3 cup melted butter
Here’s the recipe I used:
- 3 large bananas
- 1/2 cup coconut sugar
- 1/4 cup white sugar
- 1 egg
- tsp. baking soda and baking powder, each
- 1/2 tsp. salt
- 1 1/2 cups all purpose flour
- 1/3 cup melted butter and Kentaste coconut oil (about half each to make 1/3 cup)
- 1 tsp Aduna Moringa Powder
- 1 tbsp ground flax seeds
- 1/2 tsp cinnamon
- 1/2 tsp vanilla
- leftover mixed seeds to sprinkle on top (sunflower, flax, pumpkin)
Mash bananas, add sugar, add egg, add butter/oil, stir in dry ingredients.
Bake at 375f (190c) for about 45 minutes.
Here it is!
And topped with some delicious almond butter.
